Modern Restaurant Management (MRM) magazine caught up with Chef Rick Bayless during a festive fiesta at Cantina Rooftop in New York City to discuss restaurant industry challenges. Watch to hear his views on what to expect in 2017.

The event featured a collaboration menu between Bayless and sponsor Modelo Negra including  Grilled Duck Breasts with Mole Colorado, Tacos of Garlicky Mexican Greens and Modelo Negra Chocolate Floats. 

Fun Fact: If stranded on a desert island, Chef Bayless would want to have a cast-iron skillet as his culinary companion.
