Helping restaurants understand the benefits of participating in “Meatless Monday” was one aspect covered by The Monday Campaigns, the nonprofit public health organization behind the global Meatless Monday movement, during a panel discussion at the International Restaurant and Foodservice Show of New York.
Johns Hopkins Center for a Livable Future, a scientific advisor to Meatless Monday, surveyed foodservice operators on how they are serving up flavor-rich non-meat menus and promoting them to their customers. The survey uncovered promotional challenges the foodservice operators faced and how they tackled them with creative solutions.
