For more than two decades Sam Ballas, Founder of East Coast Wings + Grill, has focused on brand building in a smart and sustainable manner. Most recently, he co-founded Sammy's Sliders with chef Sammy Gianopoulos. After successfully opening a second location in Kernersville, NC, and planning for a third one, the fast-casual gourmet slider brand has started franchising and plans to grow strategically in the Southeast region.

What kind of impact do you feel technology and AI will have on restaurants moving forward?
Technology – and especially AI – is already reshaping how restaurants operate, and that impact is only going to grow. AI-driven tools can help optimize everything from labor scheduling to inventory management, reducing waste and improving margins. AI-powered chatbots and ordering systems streamline customer interactions, speeding up service while maintaining a personal touch.

Moving forward, what role will sustainability play in franchise evolution?
Sustainability is no longer a “nice-to-have” – it’s a must. Consumers, especially younger generations, are making dining decisions based on a brand’s environmental impact. Franchise brands need to integrate sustainability into every part of their business, from sourcing ingredients responsibly to reducing packaging waste and optimizing energy use.
