Feeding Gen Z: The Rise of Authenticity in F&B
4 Min Read By Bob Vergidis
The dining landscape is shifting, driven by Gen Z's (currently 11- to 26-year-olds) quest for “genuine” culinary experiences over the conventional allure of "the best" restaurants. Gen Z has an appetite for knowledge that sits at the tip of their fingers, unlike any generation before. They research, investigate and seek out experiences – especially when it comes to restaurants. But it’s not because they want the best option, they are looking for the most authentic food. As Merriam-Webster's word of the year for 2023, authenticity is proving to be something that people of all generations search for now more than ever.
For restaurateurs, the challenge is to pivot from the pursuit of being the best to fulfilling the desires of these experiential diners. This is where innovative technology steps in, offering a silver lining. The right technology can help restaurants worry less about simple tasks and more about prioritizing their authenticity. By using technology to create frictionless operations, restaurant owners can dedicate their time and efforts to making their restaurant the best and most authentic version of itself.
The Gen Z Influence
This tasteful group of about 70 million Americans craves authenticity in every bite, from organic street foods to diverse global cuisines. As they age into the primary dining audience and gain more purchasing power (currently sitting at $450 Billion globally), their preferences aren't just passing trends but the blueprint for the future of food and beverage establishments.
Technomic’s College and University Trend Report found that 42 percent of Gen Z are interested in street food on menus, proving this drive for authentic cuisine and the ability to influence food culture. However, this generation's desire for authenticity extends beyond the plate, with a restaurant's ambiance, branding and overall narrative playing crucial roles in their dining choices. Gen Z is keenly aware of what social media follows and they’re eager to see if the hype is real by showing up and trying new food experiences.
Gen Z demands transparency and ethical practices in the food industry. They drive the demand for clean labels, responsibly sourced ingredients and sustainability. They champion farm-to-table movements, support local businesses and are conscious of the environmental impact of their dining choices. Restaurants that provide clear information about the sourcing of their ingredients and the ethics behind their operations are likely to win the loyalty of this conscientious cohort.
According to a National Restaurant Association Show presentation, Gen Z consumers care more about authenticity, convenience and aesthetics than price value. Going deeper, we also see differences in behavior within the generation as the older Gen Z wants convenience, and the younger cohort wants good vibes and social and fun experiences.
Gen Z is arguably the most diverse American generation to date, both ethnically and culturally, which deeply influences their expectations for dining. They seek establishments that reflect this diversity not only in the menu options but also in the staff and management teams.
Technology as a Catalyst
Technology integration in the restaurant industry is more than a convenience; it's a revolution that places authenticity at the forefront. Online ordering, kiosks, QR codes and social media platforms like TikTok are not just tools but gateways for Gen Z to discover and share authentic dining spots that might otherwise remain unsung heroes of the culinary world.
Automation in the food world has been discussed for decades. While it gathered mixed opinions through trial and error, it’s the industry's future and will play a significant role in 2024 and beyond.
Tech solutions also provide valuable insights through customer feedback, enabling restaurants to tailor their offerings to their customers. They can then experiment with different options and flavors to learn which customers respond best to and adapt.
Catering to a New Audience
To capture Gen Z's taste buds and attention, restaurants must continually innovate their menus. Gen Z diners look for menus that reflect a true understanding of the cuisine's origin, crafted with care and knowledge. This could mean introducing traditional dishes with a modern twist, focusing on authentic ingredients or offering regional dishes that tell a story.
It’s all about creating a menu that serves as a cultural dialogue between the chef and the consumer and provides an experience that is both educational and delicious.
The preference for an all-encompassing authentic experience demands that restaurants not only serve culturally representative meals but also create inclusive and genuine spaces. It's a holistic approach to dining that calls for a deep understanding and celebration of the cultures that make up modern America.
In response, forward-thinking restaurants are curating spaces that double as cultural hubs, hosting events and offering dishes that align with their customers' and community's vibrant and varied tastes.
Authenticity as the New Benchmark
As we move through an era where Gen Z is starting to call the shots, authenticity in all areas of the experience has emerged as the new benchmark for dining excellence. Gen Z's influence on the dining scene calls for an industry-wide evolution. Consumers now crave more than just the best restaurants; they want genuine flavors, ethical practices and inclusive spaces that celebrate cultural diversity.
Innovative technology and automation are crucial in meeting these demands by streamlining administrative tasks and allowing restaurant owners to prioritize authenticity and tailor the experience to these new preferences.
The future of dining, guided by Gen Z's values, is a vibrant, inclusive and ethical landscape where technology plays a vital role in reducing friction and breaks down the wall between the guest and the kitchen. This is not just a trend; it's the new norm in the food and beverage industry, setting the stage for a more connected and culturally aware dining experience.
