Following the successful opening of The Pie Room at Holborn Dining Room in 2018, Executive Head Chef and pastry expert, Calum Franklin, is launching its inaugural "Pie Room Guest Series." Inviting some of the biggest names in the food industry to create signature pies, The Pie Room Guest Series will be dedicated to one of Britain’s most iconic dishes and will bring together leading chefs to create beautifully intricate one of a kind pastries. The pies will be sold to customers in The Pie Room at Holborn Dining Room and all profits will go to the collaborating chefs’ chosen charity.
Launching The Pie Room Guest Series on February 1 will be Tom Kerridge, who has developed a Steak and Blue Cheese Pie with Rebellion Ale and Onion Gravy. For one month only, visitors to The Pie Room will be able to purchase Tom’s creation for £8 per pie. The Pie Room sells fresh pies from Monday – Friday between 11 a.m. – 4 p.m. and passers-by can pop in from High Holborn and grab a pie to go via the handy street-side hatch. All proceeds from the pies sold will go to a Hospitality Action; a charity close to Kerridge’s heart. Established in 1837, Hospitality Action offers assistance to all who work, or have worked within hospitality in the UK, providing vital advice and support.
On the February 12, The Pie Room will also host a collaborative dinner presented by Executive Head Chef Calum and Tom Kerridge. 10 food-lovers can buy tickets to enter the intimate Pie Room – a treasure trove for savoury delicacies – and immerse themselves in an exciting evening of culinary delights, hosted by Calum and Tom. All proceeds from the dinner will also go to Hospitality Action. Along with bespoke wine pairings, dishes on the bespoke menu will include: Rabbit and Bacon en Croute, Lobster Thermidor Tart as well as Truffle Roast Chicken with Gouda Mash and Chasseur Braised Leg. “Everyone knows I am obsessive about pies so being able to share this experience with other chefs in the industry is really exciting," said Franklin. "The fact that proceeds will be donated to amazing charities makes the experience even better and I look forward to welcoming chefs throughout the year to The Pie Room.”
Franklin is renowned for taking old-school pastry classics and updating them with quality British ingredients and complex techniques, resulting in constructions that are elegant and refined. Further chefs in The Pie Room Guest Series in 2020 will be announced soon. Each chef will choose their chosen charity for the donation of proceeds.
