The Cosmopolitan of Las Vegas is debuting Paired, a rotating culinary series that partners guest chefs and industry personalities with the talents behind The Cosmopolitan’s award-winning Restaurant Collection. Featuring collaborative pop-up events and kitchen takeovers, the Paired experience provides guests a dual take into each chef’s perspective as specialty dishes come together to produce an unmatched spread.

The series kick-off event featuring Chef Shirley Chung will take place on Saturday, Dec. 7 at 7:00 p.m. within Red Plate’s main dining room. The dinner includes three courses presented by each chef in addition to two collaborative courses alongside inventive Red Plate cocktails and wine from Ao Yun, an exclusive luxury cabernet from the foothills of the Himalayas.

“I am excited to be back at The Cosmopolitan of Las Vegas cooking with Chef Cheung.  It feels like a homecoming for me,” said Chef Shirley Chung. “China Poblano was where I started to cook Chinese cuisine from my own heritage nine years ago.  I am looking forward to collaborating with Chef Cheung at Red Plate, showcase my progressive Chinese American dishes with his classic Cantonese cuisine, and give our guests a unique journey of past and present Chinese cuisine in America.”  

Menu highlights include an array of carefully selected dishes including: Matsutake Mushrooms with steamed egg custard, Matsutake consommé, Beijing Lamb Belly braised, pressed, roasted lamb belly, spiced sesame sauce, Napa cabbage heart, Australian Lobster Tail Foie Gras, and Coconut Tapioca Pudding, dragon fruit, mango, condensed milk, passionfruit snow, among others. Red Plate, located on the third level of The Cosmopolitan’s Boulevard Tower, celebrates traditional Chinese cuisine in a refined setting. The culinary vision is led by Chef Yip Cheung, an esteemed expert in multi-regional Chinese cuisine. As Executive Chef of Red Plate, Cheung utilizes traditional Chinese techniques and preparations to present an authentic Cantonese menu with hints of modern inspiration.

Chef Shirley Chung is a native of Beijing and a proud Chinese-American and author of Chinese Heritage Cooking, From my American Kitchen. In 2013, Shirley was a chef contestant on Bravo’s Top Chef Series Season 11 New Orleans and was invited to compete again in 2016 on Top Chef Season 14 Charleston where she was awarded as the runner up. In a partnership with her husband Jimmy Lee, Shirley showcases her Chinese heritage in progressive Chinese cuisine at Ms Chi Cafe in Culver City. In 2010, Chef Shirley opened an innovative Mexican and Chinese concept, China Poblano at The Cosmopolitan of Las Vegas as Executive Chef alongside José Andrés.
