MAD Greens Opening Day

MAD Greens, known for made-to-order salads topped with premium, farm-fresh, locally sourced ingredients, will open its third Texas location in Round Rock on Thursday, July 21. The first 25 guests in line at the newest MAD Greens location at 10:30 a.m. on opening day will receive a $25 gift card. The address is 455 University Blvd., Round Rock, TX, 78665 As with the first two Texas Mad Greens openings, a portion of the proceeds from opening day will benefit Sustainable Food Center. MAD Greens opened its first Texas location at Domain Northside in April, followed by the second location in Lakeway in June.

In addition to the customizable salad offerings, where guests choose among leafy green bases (spinach, kale, romaine or baby greens) and then adding toppings such as pears, artichoke hearts, edamame, egg, goat cheese and more than 20 homemade salad dressing varieties, there are two salads crafted specifically with Texas in mind. “The Bonnie Parker” includes baby greens, slow-roasted chicken, smoked cheddar, Craisins, MAD Spice pecans and apples topped with Smoky Cider Vinaigrette and the “Eva Peron” features baby greens, Plancha style vegetables (fennel, carrots and beets) from Johnson’s Backyard Garden Organic, cotija cheese, citrus grilled chicken and Chimichurri Vinaigrette.
In addition to the Texas-inspired fare, there are several signature salads, many named after “MAD” famous people and literary characters such as Dionysos, Ty Cobb and Edgar Allan Poe. The restaurant also specializes in fresh wraps, paninis, juices and soups. Like the Domain and Lakeway locations, MAD Greens Round Rock will partner with local purveyors like JB Organics, Lone Star Goat Cheese, Round Rock Honey and Maine Root Handcrafted Beverages.
Founded in 2004 and now with 24 locations across Texas, Colorado, Arizona and coming soon to Utah, MAD Greens has built a loyal following for its healthful, ‘crave-able’ and customizable menu, highlighted by gourmet, made-to-order salads topped with premium, farm-fresh, locally-sourced ingredients.
